snowed in sunday brownies

Snowed in Sunday treats for friends, and only four simple ingredients you probably have in your cupboard: cacao, nut butter, gf oats, and maple syrup. (Alright, there’s also a pinch of salt and baking soda, but still! Simple!)

Baking has always felt like a form of art to me—therapeutic, creative, pleasing and provoking. Our tastebuds are the best critics. But ultimately, it’s the baking itself that offers the most satisfaction; a nostalgic experience somehow—complete with sounds and smells that perfectly compliment the silent, blurred landscape outside the window. Providing comfort and nourishment for body and soul. For company, no matter how small the gathering.

Sunday Brownies

1/3 cup cacao powder
1/2 cup gf rolled oats
1 cup nut butter
1/2 cup maple syrup
1 1/2 tsp baking soda
1/8 tsp sea salt

Blend your oats into a fine flour, then mix all ingredients in a large bowl until smooth. It will likely be very sticky (you can add a little milk or water if desired). Scoop mixture into a parchment-lined 7x7 cake pan and spread smooth. Bake in a preheated 325 degree oven for 15 minutes on the center rack. Allow to cool, or don’t. Indulge to your heart’s content. That’s what Sundays are for!
