Chocolate Chip Coconut Cookies

It only makes sense that our mothers will come up with even more delicious recipes than us. After all, they have been cooking decades longer; it's only fair. 

But my goodness, am I jealous! Recently, my parents have been incorporating more plant-based options into their diet, and my mother has jumped in head first, creating delicious recipes by melding together her preferred tastes with new cooking techniques. She inspires me daily.

Last weekend when she came to visit, she brought along a container of these cookies, and though I hate to admit it, I think they might be better than mine! She's kindly offered to share the recipe with you here. 

Chocolate Chip Coconut Cookies 

Ingredients
2 mashed bananas
1 tbsp agave
1 cup unsweetened shredded coconut
1/4 cup oats
3/4 cup rice flour
1/4 tsp baking soda
1/4 tsp baking powder
1 tsp vanilla
1/8 tsp salt
3/4 cup almond butter
1/2 cup chocolate chips

Mix everything together in a large bowl until smooth. Fold in the chocolate chips, then drop spoonfuls onto a lined baking sheet. Bake at 350 for 10 min then let cool and set. Store in the fridge for longer shelf life.
