Nourishing Strawberry Mint Smoothie
I'm the only one in my house who likes strawberries, so I can't always eat them quickly enough. Thankfully, my favorite smoothie combination includes strawberries, and with our mint on its last leg for the season, I decided to throw it in for a refreshing end of summer smoothie.
While I don't advocate drinking smoothies on a regular basis (you can read more about why this unhealthy 'health trend' should be avoided), I do believe in indulging in some yummy but still plant-based treats from time to time! This green smoothie is full of healthy fats, proteins and antioxidants. The avocado gives it a creamier consistency and the mint adds just the right flavor to balance the sweetness of the berries and lemon. It's filling, nourishing but still deliciously refreshing.
Additionally, all of the ingredients for this smoothie are considered alkaline-forming, which is what makes it even better for you--having a diet high in alkaline foods helps prevent cancer because it oxygenates your blood cells. NOURISHING STRAWBERRY MINT SMOOTHIE (Yields approx 2 cups)
2/3 cup sliced strawberries
1/2 cubed small avocado
1 large stalk of kale
2 tbsp lemon
1 large handful of torn mint leaves
2/3 cup very cold water (or more till desired thickness)
Add all ingredients to a blender and blend until smooth. If using a magic bullet (like me), start with the strawberries, lemon and half the water, then add avocado slowly, finishing with kale and rest of water. Don't let the color deter you--this thing tastes so good.
Pour into your favorite glass, and drink up!
