Variations of this recipe have been circling the web, and for good reason--these have quickly become a favorite for me. I took my first bite, scrunching my face up as I chewed, expecting to be weirded out by the texture or taste....but they were amazing!
These are like (crunchy & chewy) cookie dough bites, but without all the added sugar and processed ingredients. In fact, not only are these delicious treats super easy and convenient to make (no-bake for the win!), they're also packed with nutrients.
Oatmeal is great for your body because it's high in protein and fiber. All the fiber in oatmeal forces your body to digest more slowly and thoroughly , leaving you feel full and satisfied for a longer period of time. The chia seeds work the same way, and they're rich in awesome stuff like omega-3s, antioxidants, vitamins and minerals. Chia seeds are like the tiniest tiny superfood.
The combination of dark chocolate and agave in these power bites also satisfies any sweet tooth-- So essentially, you're getting tons of healthy nutrients in a yummy snack form--less than 2 grams of sugar per bite. And let's not forget about the wonderful benefits of coconut and almond butter: two additional ingredients that add flavor, texture, and good, healthy fat into your diet.
If you're an athlete, these are great to consume before, during and after intense physical activity. Complex carbohydrates, like those found here, are your body's primary source of fuel for energy. So if you want to boost your performance and endurance, load up!
HEALTHY COOKIE DOUGH POWER BITES (yields approx. 30 bites)
1 cup of organic rolled oats
2/3 cup of unsweetened coconut flakes
1/2 cup of natural almond butter
1/2 cup of chia seeds
1/2 cup of dark chocolate chips
1/3 cup of honey
1 tsp of vanilla
In a large bowl, mix dry ingredients until well blended. Add remaining ingredients slowly, folding in until entire mixture is evenly coated. Should have slightly moist appearance with no dry spots (like cookie dough, but obviously not as doughy).
Scoop into an airtight container or saran wrap and set in the refrigerator for 1 hour to allow cooling and hardening. Remove, and roll 'dough' into roughly 1-inch balls. Store power bites in the fridge and enjoy when you'd like.
Helpful tip: when rolling, coat hands in coconut oil and gently squeeze the dough in the palm of your hand to help the chips settle in. Wash hands in between rolling so the dough doesn't stick; if dough begins to warm, set in the fridge again before continuing.
