I don't often make smoothie bowls, but when it's a lazy Saturday and there's a beautiful mango ripening on the kitchen counter, what's a girl to do?
What's so strange about smoothie bowls is that they don't take nearly as long as cooking a meal, yet I avoid them like the plague. Granted, it's better to chew our foods in their whole form, but even still, a smoothie bowl is a delicious treat, especially when you're craving something sweet. But I hate doing dishes, and cleaning a blender is pretty much the worst. When my tummy's grumbling, there's no time for that.
Needless to say, I took one for the team today and gave our blender a good spin. The results were certainly worth it.
This green mango smoothie bowl was a random, spur of the moment creation. I added a little of this and that until I captured a tropical and refreshing mix--something nostalgic for this suddenly freezing fall. (Seriously, it went from 65 to 35 degrees in a matter of hours the other day.)
And I must admit, it was pretty easy after all.
Green Mango Smoothie Bowl
1 medium mango, chopped
1 stalk of kale, chopped
1 small mandarin, chopped
1/4 cup of coconut milk
1/2 tbsp ground flaxseed
1 tsp agave
1 tbsp shredded coconut
1 tbsp chia seeds
1 handful of blueberries
Add all ingredients to a high-speed blender and mix until smooth. Transfer to a bowl, and add your favorite toppings. I chose shredded coconut, chia seeds, and blueberries. Yum!
